Quick answer: Most "one size" beanies are knit for 22–23⅜ inch heads (56–59 cm), so on a 7½+ head they ride up and squeeze even though they stretch. The beanies below are the ones actually built for 7½–8½ (60–68 cm) heads, with the maker's stated size range and price for each. Why beanies don't fit big heads (even though they stretch)
A knit beanie can stretch around a bigger head; that's not the problem. The problem is depth. A standard beanie is knit to a crown depth that covers the ears on a 22-inch head. Stretch it around a 25-inch head and the same amount of fabric has to cover more distance, so the cuff climbs above your ears and the whole thing sits on top of your head like a cap. Stretching also tightens the knit, which is why an "it'll stretch" beanie gives you a headache after an hour. A beanie made for big heads is knit longer and wider to begin with, so it covers your ears without being stretched to its limit. Lamood's note on crown depth puts it well: stretch helps, but depth still matters.

Oddjob Big Beanie ($40) and Big Waffleknit Beanie ($50)
Oddjob is the only brand here that publishes its beanie sizing the same way it sizes caps, in two real sizes: XL for 7½–8¼ (23⅝–24¾ in / 60–63 cm) and XXL for 8–9¼ (24¾–25⅞ in / 63–66 cm). If you know your fitted size that makes it the easiest to buy with confidence, and the XXL goes bigger than anything else on this list. Mammoth Classic Merino Beanie ($49.99)
The only merino option, so the warmest per weight and the least itchy against skin. Mammoth says it fits "7¾ up to 8½", with a Regular and an XXL. One caution: the inch ranges Mammoth lists on the product page (Regular 24¼–26⅞ in, XXL 25–27⅝ in) are far wider than its hat-size claim, so go by the hat size. Lamood Big Beanie Cap ($29.95)
Lamood publishes garment dimensions rather than a hat-size range: 10 inches wide and 12 inches long, in a fine-gauge acrylic it calls "super stretch." A slouchy style rather than a fitted cuff, with 10% spandex in the knit and a 13½-inch height, which is why it works on big heads: there's simply more fabric. Carhartt A18 Watch Hat ($19.99), for reference
The most-recommended beanie in every "big head" forum thread, and it's a good hat, but Carhartt lists it as one size for 22–23⅜ inches. Big-headed fans like it because the rib knit stretches a long way, not because it's built for them. If you're 7½–7⅝ it will probably work; at 8 and up you'll be wearing it above your ears.
How to choose
Buy by published size, not by "stretch." If a brand states a hat-size range (Oddjob, Mammoth, BigHatStore), match it to your measurement. If it states garment dimensions (Lamood, King & Fifth), look for at least 12 inches of length on a 7¾+ head. Wool is warmer and less sweaty; acrylic is cheaper and machine-washable.
